Our Head Chef’s modern outlook allows him to create fine dining dishes. Dariusz Polak came from the Góralska Tradycja Restaurant – he’s a culinary virtuoso, perfect in every way and devoted to his passion for cooking. He’s prepared his own menu at our restaurant, and it includes elements of Old Polish cuisine. At the request of Bachleda Senior, the menu features “Senior soup”, which is an amazing highlander tripe soup. It’s extremely popular and reflects our love of family, highlander tradition and hospitality. Right from the outset, we wanted our Cracow hotel to include highlander elements, but in an elegant, subtle way, so when we look at the paintings in our restaurant, we see mountain goats, edelweiss and Zakopane motifs woven into Cracow grotesques.”
